1 cup cake flour......................................................1 cup all purpose flour minus 2 tablespoons

1 Tablespoon cornstarch (for thickening).....................2 tablespoons all purpose flour

1 teaspoon baking powder........................................1/2 tsp cream of tartar plus 1/4 tsp. baking soda

1 pkg. active dry yeast...........................................1 cake compressed yeast

1 cup sugar...........................................................1 cup brown sugar or 2 cups sifted powdered sugar

1/4 cup fine dry bread crumbs..................................3/4 cup soft bread crumbs or 1/4 cup cracker crumbs

1 cup honey..........................................................1 1/4 cup sugar plus 1/4 cup water heated to dissolve


1 cup corn syrup....................................................1 cup sugar plus 1/4 cup water heated to dissolve

1 sq.(1 oz) unsweetened chocolate............................3 Tablespoons unsweetened cocoa powder plus 1 T. butter

1 cup whipping cream, whipped..................................2 cups whipped dessert topping

1 cup buttermilk......................................................1 Tablespoon lemon juice or vinegar plus enough whole milk to make 1 cup (let sit for 5 minutes before using)                                                                                       

1 cup whole milk......................................................1/2 cup evaporated milk plus 1/2 cup water

1 cup light cream.....................................................1 tablespoon melted butter plus enough milk to make 1 cup

1 cup tomato sauce.................................................1/3 cup tomato paste plus 1/2 cup water

1 cup tomato juice...................................................1/2 cup tomato sauce plus 1/2 cup water

1 small onion...........................................................1 teaspoon onion powder or 1 T. dried minced onion

1 tsp. dry mustard(cooked mixtures)............................1 tablespoon prepared mustard

1 teaspoon dried herbs..............................................1 Tablespoon fresh herbs

1 cup catsup or chili sauce.........................................1 cup tomato sauce plus 1/2 cup sugar and 2 T. Vinegar                                                              (used in cooked mixtures)                                                                             

1 clove of Garlic.......................................................1/2 teaspoon garlic powder

1 whole egg.............................................................2 egg yolks (in custards)

1 cup sour cream......................................................3 tablespoons butter plus 7/8 cup sour milk

1/2 cup maple sugar..................................................1 cup maple syrup

1 cup whole milk.......................................................1/2 cup evaporated milk plus 1/2 cup water

1 cup sugar (in baking)..............................................1/2 cup maple syrup and 1/4 cup corn syrup (lessen liquid)
These are simple things you can use to adapt a recipe if you find you are out of a certain ingredient
