I learned how to make hamburger stroganoff when I was pretty young.  I remember my mom standing behind me in the kitchen to watch that I was doing it right.  I still recall her explaining to me about when you added the sour cream to the recipe.  She would say "you don't want the sour cream to break? "
To this day I still remember how she carefully showed me to add a little of the liquid from the pan into the bowl of sour cream. keep Adding liquid until the sour cream becomes warm.  Then slowly you add the sour cream to the pan.  If you don't do it right the sour cream will separate and your dish won't look so appetizing.  But don't worry I have goofed before and still served it to my family....to tell you the truth I don't think they even knew.
