Cake and Pie Recipes
I made a fresh batch of these yesterday. This first batch I didn't fill the muffin cups full enough they turned out little so the second batch I made sure I filled it atleast 2/3rds full.

This recipe comes from my Mom's little red and white cookbook. I couldn't tell you who Hester is but I can guess it is from my Dad's side of the family.

This is a light variation of the stand by traditional pumpkin pie. You get all the pumpkin taste but this pie is very light and airy. Using a sugar free or light whipped topping can also cut some calories without losing any taste.
My attempt on this delicious coffee cake was a flop. As you can see in the picture. I didn't read the recipe right and apparently did not bake it long enough. It says for one hour and 10 minutes.
This is not a family favorite per say, but it is one of my family's most requested flavors of cake. My dad had a carrot cake for his 80th birthday also just last week my sister Anita turned 50 and she had carrot cake at her birthday.
