Chocolate Zucchini Cake
This is a great recipe for the summer because you can use up all those over large zucchini all your back yard farmers have in over stock. We all have those wonderful neighbors that love to putter around in the garden, then show up at your door carrying the largest zucchini you have ever laid your eyes on. Well this is just the recipe you want to use up some of that over grown zucchini. I have a wonderful recipe for a zucchini casserole with tomatoes and onions I will share with you but please do not use one of these over sized vegetables. They are tasteless and will not be a pleasure to your palate. I hope you enjoy my version and please if you have your own version send it on to me I will be glad to include your recipe also.
Chocolate Zucchini Cake Recipe
1/2 Cup margarine 1 tsp. salt
1/2 Cup Oil 1 tsp. Baking soda
1 3/4 sugar 1/2 tsp. Baking powder
2 eggs 1/2 tsp. cinnamon
1/2 Cup Sour milk 1/2 tsp. cloves
1 tsp. Vanilla 2 cups shredded Zucchini
2/ 1/2 cups flour 1/2 cup chocolate chips
4 tablespoons cocoa
Cream margarine, oil and sugar together until light and fluffy, add eggs, sour milk and vanilla. Beat well. Sift together dry ingredients add to batter. Beat until thoroughly mixed. Fold in the shredded zucchini. Pour the batter into a 9 X 13 inch pan. Sprinkle the chocolate chips on top. Bake at 350° for 40 to 45 minutes
