Chicken & Rice Recipe
This again was a recipe my mom made when I was a child.  It is one of the many I will be adding to my web site from the metal box that was hers. This dish is not the prettiest when you serve it but the flavors are great.  I think that brushing the chicken with lemon juice and butter really adds to the flavor of the dish.  Again this is one of those easy one dish meals that you can throw together quickly.  Serve this with a crisp salad and vegetable and you have a nice dinner in no time.  I am sure you could replace the whole cut up chicken with boneless chicken breasts but the flavor you get from the bone in chicken is better. 
1 10.5 oz can cream of celery soup
1 10.5 oz can cream of chicken soup
1 10.5 oz can cream of mushroom soup
2/3 cup long grain rice
1 whole chicken cut up or 4 boneless chicken breasts

Mix all three soups together with the rice and pour into a baking dish. 

Lay the chicken on top and cover with foil  bake for 30 minutes and uncover and continue to bake for 30 minutes

1 hour total at 350 degrees

Baste chicken with 3 Tbls. butter and 3 Tbls. lemon juice.

I browned the chicken a little before adding to the casserole.
