Hard Boiled Eggs
If you read my home page you would know why I am adding such a thing to my moms treasured recipes.  This is to help any novice cook or new bride out there that isn't quit sure how to make a hard boiled egg.  This full proof method has never let me down and I have been using it for about 8 years. If you are boiling one or 24 eggs this method works.   When Sara Moulton was on TV she told how to make the perfect hard boiled egg, and to this day it has never failed me.  Perfect yellow center without the green around the center yolk. 
Hard Boiled Egg Recipe
First when buying your eggs it is best to buy them in advance of needing the hard boiled eggs.  Older eggs peel easier, so buy them earlier then needed.  Take a heavy bottom dutch oven or size pan needed for the amount of eggs you need.   Fill the bottom of the pan with eggs, do not stack them or fit them  tight together,  leave room.  Then fill the pot with cold tap water and set on burner.  Bring the pot to a full boil and let boil for 3 minutes.  Turn the burner off after 3 minutes and take pot off the burner.  Cover the pot with the lid and let stand for 15 minutes.  I always set the timer on the stove so I know the exact time. After the 15 minutes drain the eggs carefully and then fill the pot with very cold water.  Sometimes I just place the pot in the bottom of the sink and run the cold water until the water is cold in the pot. 

Let the eggs cool down and then peel and eat. 

If you follow the directions exactly you will have no problems.

Also, another tip is to inspect your eggs before boiling to make sure there are no cracks or weak spots.
