No Peek Chicken
Here is another quick and easy recipe to keep on hand. I don't remember having it as a child but I do remember my mom giving it to me when I was working full time and looking for a quick meal to fix my family. This makes life so easy if you are like a lot of us that purchase those big bags of chicken breasts. This one you can fix even when the chicken is frozen.
No Peek Chicken Recipe
1 Cup Rice
1 1/2 Cups Water
1 Package dry onion soup mix
1 Package chicken
1 Can cream mushroom soup
Mix 1/2 the onion soup mix rice, cream of mushroom soup and water together
add them to a 9" X 13" baking dish laying the chicken on top of the rice mixture. Take the other 1/2 of the soup mix and sprinkle it over the chicken. Cover the dish tightly with foil and bake on 350 degrees for 1 to 1/12 hours depending on the size and amount of chicken.
This recipe is great because you can adapt it to your families taste. My husband loves onion so I put two packages of dry onion mix in. If you only have chicken parts you can use them. Or replace the long grain rice with brown rice or basmati rice. I just thought of couscous could even work. Replace the water with a stock or broth. Be creative!
I have a correction for this recipe I just learned from my sister. I visited Laurel the last week in October and when I arrived at her home after a long 12 hour drive she had dinner ready for myself and my daughter Corie. She said it was No Peek Chicken. After eating a few bites I noticed that her recipe had some creaminess to the consistency. I asked her about it and she said its probably from the cream of mushroom soup in it. I then announced that I don't add cream of mushroom soup to my recipe. Apparently I copied the recipe wrong way back in 1996 and have been making it wrong all these years.
