Carrot Zucchini Bar Cookies
Carrot Zucchini Bar Cookie Recipe
1 1/2 Cups Flour
1 tsp. Baking Powder
1/4 tsp. salt
2/3 Cup firmly packed light brown sugar
1/2 cup margarine or butter (1stick) room temp.
1 3 oz pkg. Cream cheese room temp.
1 egg
1 tsp. Vanilla
2/3 cup coarsely grated carrot
2/3 cup coarsely grated zucchini (squeeze excess liquid out)
1/2 cup golden raisins
Beat together brown sugar, butter and cream cheese in large bowl until fluffy. Beat in egg, vanilla. Slowly add the flour, baking powder and salt. Stir in carrots zucchini and raisins. Spread batter into a greased 9 X 9 inch square pan. Bake in a preheated oven 350º for 30 minutes. Cool completely on a wire rack in the pan.
Cream Cheese Frosting
1/4 cup butter or margarine
1 3 oz package cream cheese
1 1/2 cups powdered sugar
1/2 teaspoon vanilla.
Beat until smooth and fluffy, Frost cookies and serve
My personal opinion is that anything with cream cheese frosting is great. These cookies are a wonderful choice if you need and easy cookie to take to the local church pot luck or school function. The carrot adds a nice sweet taste with the zucchini adding moisture. The nutritional value of these little gems is far better then many cookie recipes so if you are trying to get some vegetables into your families diet why not try these but don't let them know .
