Pilgrim Pumpkin Bar Recipe
With Thanksgiving close by this recipe came to mind. If you like the taste of pumpkin these are a great change from the ordinary pumpkin pie. Or if you know someone who isn't fond of pumpkin, I can bet you that this may just change their minds. These are very moist and topped with the cream cheese frosting it will make fond memories of your thanksgiving.
2 Cups sugar
2 Cups flour
1 Can pumpkin
1 Cup vegetable oil
4 Eggs
2 tsp. baking powder
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt

Combine all the dry ingredients in a bowl. Mix the eggs oil and pumpkin together. Combine and mix well. Pour into a 15X10 inch jelly roll pan

Bake at 350 degree fro 25 to 35 minutes. Let cool and then frost .

Frosting
8 oz. package cream cheese
6 Tlb. butter or margarine
1 tsp. pure vanilla
4 Cups powdered sugar

Cream together cream cheese and butter until light and fluffy. Beat in sugar and vanilla.
Spread evenly over the bars.
Makes approx. 4 dozen
