When I asked my Mom what she had taken out of the oven, she announced "CORN PUDDING" I almost burst out laughing. "That sounds terrible, but I'll try it." To my surprise it tasted sweet and creamy with a definite flavor of corn.
I made this a couple of weeks ago as a side dish to a chicken recipe. I liked the effect of the bread crumbs on the top as it made it nice and crunchy.
