Pepperoni Pizza Quiche
Blind bake slightly the pie crust.  Not browned but firm then spread with the 1/2 cup pizza sauce.  Cut pepperoni into strips and fry with onion and pepper in sauté pan until onion is transparent, adding olive slices right before you take off the heat.  Let mixture cool.  Mix 4 eggs and sour cream with food processor or hand mixer until light and foamy.  Add the shredded cheese to meat mixture and spread over the pizza sauce.  Add egg mixture and let set 15 minutes before baking in the oven at 375 degrees for 35-40 minutes.  Bake until set and knife inserted in middle comes out clean.  You can adjust this recipe anyway for your own tastes.  Use any color pepper or add mushrooms.  What ever your family likes on their pizza.  Enjoy!

1/4 lb sliced pepperoni
1 medium onion chopped
6 oz fresh baby spinach
Small can sliced black olives
1/4 cup bell pepper (green, red,Yellow)
1/2 cup pizza sauce
4 eggs
3 Tbsp. Sour cream
8 oz pkg. shredded Italian cheese
1 9 inch pie unbaked pie crust
